Description

These Quark Taler are a delightful and satisfying treat, offering a subtly tangy flavor from the quark cheese, balanced with a hint of sweetness. Pan-fried to a golden perfection, they feature a tender, fluffy interior and a lightly crisp exterior. Typically served warm, they are often dusted with powdered sweetener and drizzled with syrup, creating a comforting and wholesome dish.


Ingredients

  • 250g quark (full-fat or low-fat)
  • 2 large eggs
  • 50g almond flour
  • 23 tablespoons erythritol or preferred low-carb sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon coconut oil or butter, for frying
  • For serving: Powdered erythritol, sugar-free maple syrup

Instructions

  1. In a large bowl, whisk together the quark, eggs, erythritol, vanilla extract, and salt until the mixture is smooth and well combined.
  2. Add the almond flour and baking powder to the wet ingredients. Gently mix until just combined, being careful not to overmix the batter. The batter will be thick.
  3. Heat a non-stick pan over medium heat and add a small amount of coconut oil or butter.
  4. Drop spoonfuls of batter, approximately 2 tablespoons per taler, into the hot pan. Gently flatten them slightly with the back of the spoon if desired.
  5. Cook for 3-4 minutes per side, or until the taler are golden brown and cooked through in the center.
  6. Remove the cooked taler from the pan and place them on a wire rack to cool slightly.
  7. Serve warm, dusted generously with powdered erythritol and drizzled with sugar-free maple syrup.

Notes

Do not overmix the batter; a few lumps are acceptable and help maintain a fluffy texture.

Adjust the amount of sweetener to suit your personal taste preference.

Cook the taler over medium heat to ensure they cook evenly without burning the exterior.

For an even richer flavor, you can add a pinch of lemon zest to the batter.
