Ingredients
- 12 ounces fusilli pasta
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breast, cut into 1-inch cubes
- 1/2 teaspoon salt, divided
- 1/4 teaspoon black pepper, divided
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 4 ounces feta cheese, crumbled
- 2 tablespoons fresh basil, chopped, plus more for garnish
Instructions
- Cook the fusilli pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the chicken cubes with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Add the chicken to the hot skillet and cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
- Stir in the crumbled feta cheese, remaining 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Cook, stirring occasionally, until the feta has melted into the sauce and it has slightly thickened, about 3-5 minutes.
- Add the cooked chicken and drained pasta to the skillet with the sauce. Toss to coat everything evenly. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
- Stir in the chopped fresh basil. Serve immediately, garnished with additional fresh basil if desired.
